Three cookies! That's all that was left from the two dozen I made as a treat for my daughter, daughter-in-law, and grandchildren after a trek to the mall to visit the Easter Bunny.
When we arrived back to my house, the Peanut Butter cookies I made that afternoon were a big hit! Since my daughter-in-law and youngest grandson are gluten sensitive, I had searched online for an easy gluten-free recipe and came upon one on the PBS Parents web site that required only four ingredients. I had to share the recipe with you because these are so easy to make and taste really good! Give them a try even if you aren't gluten sensitive. They would also be easy cookies for young children to help make.
Four Ingredient Peanut Butter Cookies (Gluten Free)
Ingredients
- 1 cup peanut butter, smooth or crunchy
- 1 cup sugar
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 degrees F. and line a large baking sheet with parchment paper.
- Using a hand or stand mixer, mix the peanut butter, sugar, egg, and vanilla on low speed until well combined.
- Using a medium cookie scoop, scoop about 1 1/2 tablespoons of dough 1 1/2-inches apart onto the baking sheet. If you don't have a cookie scoop, drop the dough with a spoon.
- Flatten the dough balls the tines of a fork, making a cross pattern on the cookies.
- Bake the cookies for 10-12 minutes until they are golden around the edges. Allow the cookies to rest on the counter for 2 minutes before transferring them to a cooling rack
- Enjoy!
The dough made a dozen generous sized cookies -- you could make them smaller if you'd like more. I used extra crunchy peanut butter and obviously, I did not press the fork indentations into them too hard -- I'll do a better job next time. I made a second batch and placed about a half cup of chocolate chips in the dough before cooking to add some variety. If you like the taste of peanut butter you'll enjoy these cookies!
Can you believe that Easter will soon be here? We are expecting a snowstorm this weekend, so like in many other parts of the country we have to wait a little longer for signs of Spring to arrive. Has Spring come to your area as yet?
Those look real good Pat! How great to have your little grands so close!
ReplyDeletewhat a lovely time...the photos are wonderful...and who wouldn't want to gobble up those delicious cookies
ReplyDeleteI just realized that you must have moved...so I came back to check and sure enough you're now in Colorado...fantastic!!!
ReplyDeleteIt's nearly Easter but it's still winter here! We're also expecting snow and bitterly cold winds this weekend, so I expect I'll just have to wait a bit longer for Spring to arrive!

ReplyDeleteThey certainly look good, Pat, and anything with peanut butter would be good with me!
ReplyDeletethese look delicious, Pat; are they crunchy or chewy? your grand-daughter is precious!
ReplyDeleteWhat a sweetie!
ReplyDelete....and the cookies too!
Your grands are adorable! Amber used to be afraid of the Easter Bunny at the mall when she was little!
ReplyDeleteI have been making those peanut butter cookies for years. I think they were called Miracle or Magic or something but I can attest to how GOOD they are. And you almost ALWAYS have these four ingredients on hand!
These look good, Pat. Great photos of the adorable grands. xo
ReplyDeleteYour granddaughter is so cute!!!
ReplyDeletePat, the images of those darling grands make me smile with delight knowing that you are there with them each day as they grow and change. Those boys are really growing and that sweet baby girl looks so precious sleeping through it all. Thanks for sharing the recipe. I'll pass it along to my friends who are gluten sensitive. ~ Sarah
ReplyDeleteBet that was fun--taking the grands to see the Easter Bunny... Cute pictures.. Love those PINK shirts --and the baby just loves heavenly...
ReplyDeleteThe cookies look great. Wonder why so many people are allergic to gluten these days. We never heard of this when our kids were little.
Winter is not finished with us yet either... Was 15 degrees early this morning. Gads!
Hugs,
Betsy
The cookies looked delicious and the grandchildren are growing so much. I can't believe your new granddaughter is getting so big. How fun!
ReplyDeleteI had to read the recipe twice. it's hard to believe these cookies have no flour in them, yet they look like thenkind that do. those gradchildren of yours are so precious.
ReplyDeletethat is so sweet of you to go out of your way to find a suitable recipe for your family's needs!
ReplyDelete& it's so nice to see how much you are enjoying your grandchildren too - I bet they are loving you being there.
: )
Thanks for your comments everyone!
ReplyDeleteArlene, the cookies were crisp, but that may be because I cooked them a little longer since the high altitude here makes everything take a little longer to cook. They were perfect for dunking ;)
Betsy, I think people are able to get diagnosed for their food sensitivities better these days than in the past. Sadly, many suffered with digestive problems in the past without knowing why.
Yes, Linda -- no flour! :)
Hi! I know those are good cookies.
ReplyDeleteLove your pictures. Happy Spring.=!
Hi Pat. Your grandchildren look so darling, they must have had so much fun. And little baby girl is so sweet sleeping in her lovely dress.

This sounds so good and very easy, too, which is just my kind of recipe! Thanks, Pat, for sharing!
ReplyDeleteHow fun to be a part of your grand's lives on a regular basis! The cookies look awesome. Who would know you could make cookies from four ingredients?
ReplyDeleteOh those must have been a nice treat! No, no spring here unless a change in the aroma counts...it smells like mud.
ReplyDeleteFun times with your grandchildren. You must be thrilled to live closer to them now.
ReplyDeleteI made those cookies once and was surprised at how well they work with no flour in the recipe. Amazing and nice that there are more options for those who have gluten issues.
It is unseasonably cold here in NC, but at least we don't have snow.
Pat, your grandchildren are adorable! What fun you must be having with them around so much! The cookies look delicious, thanks for sharing. Have a happy weekend!

ReplyDeleteHope you stay warm during the snowstorm, and have a real good weekend.
Wonderful, thank you for this recipe! I used to make these about 15 years ago and was just thinking the other day how I wished I remembered how to do them! Sounds like you all had a fun day. I've just posted this week's Homemaking Linkup and would love to have you join, if you'd like.
ReplyDeleteBlessings,
Mrs. Sarah Coller
Four ingredients, huh?
ReplyDeleteI'd better write it down.
It looks like everyone had a terrific time with yummy treats afterward! I wish my grands lived close enough to spoil - you've definitely made the right move!
ReplyDeleteHave a lovely weekend,
Robin

ReplyDeleteThis is just a good old fashioned "anytime snack." Bet you can't eat just one - would certainly apply. So sweet to see you enjoying the grandkids. Holidays are extra special.
ReplyDeleteThat has to be the easiest cookie recipe I've ever seen. I'll definitely be trying it with my grandsons. They (and their dad!) LOVE peanut butter.
ReplyDeleteThe boys did a fabulous job with the Easter Bunny. My youngest grandson is still super afraid Mr. EB. Your granddaughter sure is precious.
Yummy treats! I have all the ingredients for apple dumplings and a new recipe I found with crescent rolls and and cream cheese! They will have to wait for later this week! Too many things going on! A nice visit today!
