Did you know that the Campbell Soup Company has been making meals fun and delicious for 144 years? That every can of Campbell's Chicken Noodle Soup has 32 feet of noodles just waiting to be slurped? I grew up eating Campbell's Tomato Soup at least once a week for lunch. It is the type of soup that was perfect for toppings or dunking, and as a child I loved to dunk my grilled cheese sandwich in it. Now when I have a bowl of Campbell's Tomato Soup I sprinkle in some black pepper and add cubes of cheddar cheese on top to melt into the soup...mmm, mmm, good!
Of course, we all know that the rich creamy taste of Campbell's Cream of Mushroom Soup gives vegetables a welcome makeover in kid-approved recipes and casseroles. I always have a few cans of Campbell's line of cooking soups in my pantry. They are easily identified by the blue banner on the label that says "Great for Cooking." I have been using many of them throughout my 39 years of marriage to make some of my family's favorite comfort foods.
I have been blessed with two very active grandsons, and they now love eating the same family comfort food favorites when they come over to my house for dinner!
My husband's, children's, and grand children's all time favorite comfort food is the Classic Tuna Noodle Casserole made with Campbell's Cream of Celery Soup.
Classic Tuna Noodle Casserole
Prep time 20 minutes * Bake time 25 minutes* Makes about 4 servings (about 1 1/4 cup each
1/2 cup milk
1 cup frozen peas
2 tbsp. chopped pimientos (optional)
2 cans ( about 6 oz. each) tuna, drained
2 cups medium egg noodles, cooked and drained
2 tbsp. dry bread crumbs
1 tbsp. butter, melted
1. Heat oven to 400 degrees F. Stir soup, milk, peas, pimentos, if desired, tuna and noodles in 1 1/2 qt. baking dish. Stir bread crumbs and butter in small bowl.
2. Bake 20 minutes or until tuna mixture is hot and bubbling. Stir tuna mixture. Sprinkle with bread crumb mixture.
3. Bake 5 minutes or until bread crumb mixture is golden brown.
I usually double this recipe, as we gobble it up at a family meal. It is delicious, quick and easy to make, and I sometimes will sneak in other frozen vegetables, such as carrots or string beans to add to its nutrition.
My children and grandchildren can be picky eaters at times. Kids' tastes in food are one of life's great mysteries. While growing up, one week my son and daughter would love green beans and the next they had an aversion to green foods, unless I could disguise them some way. Now my grandsons are the same.
By making casseroles like this one -- Campbell's Baked Chicken, Broccoli and Rice-- using Campbell's Cream of Broccoli Soup, I can add extra chopped broccoli to the dish, that is often the only way I can get everyone to eat broccoli. The rice is very flavorful and while the adults love the spicy paprika sprinkled chicken, I leave the spice off the children's portions.

I just made the Green Bean Casserole on Thanksgiving Pat! Haven't had Tuna Noodle Casserole in 100 years... Sounds good:@)
ReplyDeleteThis post took me right down memory lane. We too, grew up on Campbell's soup. Our favorite, grilled cheese and their tomato soup. But, the "tuna noodle" casserole was always a hit, and my mother made the exact recipe you shared(minus the pimentos). It made me want to make it again. If I was the head of Campbell's Soups, I would send you on a trip around the world, for the outstanding job of advertising that you just did for them:)
ReplyDeleteYou mean I'm NOT the only person who likes to dunk things in hot tomato soup??? I love it. Especially grilled cheese sandwiches and buttered toast. It's 5:23 here and dark outside but I'm making some right now. It is the perfect comfort food of all time on a cold day. With snow or rain.
ReplyDelete(As you can tell, I had a nice childhood.) :))
This is a delicious memory for me. Growing up, lunches often consisted of Campbell's tomato soup with grilled cheese or Campbell's vegetable soup with peanut butter and jelly sandwiches.
ReplyDeleteBest,
Bonnie
Oh my gosh, I haven't thought about that tuna casserole for a long time, it looks so good, pure comfort food. I love to put basil and shrimp in my tomato soup. I imagine the cold has hit you out there, it is coming our way. I've been thinking about soups for the cold nights.
ReplyDeleteMy all-time, #1 comfort food is a bowl of Campbell's Tomato soup. It warms me, comforts me and helps me regain my equilibrium when life gets hectic. Our son and the-little-family-that-grew will be with us over the holidays, and I will look at the link for recipes that kids will love. Thanks!
ReplyDeleteMy favourite recipe that uses Campbell's?....well, there are a few, but my Beef Strogonoff is a family favourite.
144 years? Thats been around a long time.
ReplyDeleteAre you on Commission from Campbell' soup.
ReplyDeleteKnew a guy in Florida called Soup, his name was Ronnie Campbell
Some nice recipes there
So many wonderful recipes come to mind...the most recent was a turkey with stuffing casserole that used up the rest of the leftovers. It was yummy. Of course, we had the ubiquitous green bean casserole at Thanksgiving. Oh and I love cheesy corn chowder. I could go on, but I'm making myself hungry.
ReplyDeleteYummy post! I have used Campbell's soups for many years in casseroles and soups. One favorite is my potato soup into which I put a can of mushroom soup.
ReplyDeleteLooks delicous Pat :) slurp slurp.
ReplyDeleteI can't make Thanksgiving dinner without at least two cans of Campbell's soup! Cream of mushroom for green bean casserole and cream of celery goes into my stuffing. Your tuna noodle casserole looks yummy, I am now in the mood for it! xo
ReplyDeleteThe casserole sounds nice, but I'd have to make it without the tuna! ;-)
ReplyDeleteI hear it is pretty cold where you are today and maybe some snow? I've enjoyed catching up on these two posts and your photos of some special family times. And though I haven't made tuna casserole in a long time it was one of our favorites! Thanks for the memories. I was eating Campbell's cream of mushroom soup the moment I heard JFK had been shot. I think mom served us that a lot. Hope you are having a good week! Our youngest just in the past couple of weeks has sat up well, scooted around and suddenly crawling and pulling up in her crib, She seems more content being more mobile now, trying to keep up with her big brother and sister!
ReplyDeleteTomato soup and grilled cheese most definitely says comfort food to me. I also have fond memories of chicken noodle with saltine crackers when I was home sick from school as a kid.
ReplyDeleteI used to make a lot of casseroles when my kids were home, but now I try to limit the sodium intake. I sometimes use the heart healthy offerings that Campbell's has.
I must admit the chicken with the sun dried tomatoes looks scrumptious. I am going to check out the website. Thanks for the info.
In the winter,I could eat soup three times a day. I love the good old homemade kind.
ReplyDeleteOh, my, those adorable kids are growing so! I bet those boys keep you on your toes when you're with them. I'd be hugging and snuggling with that little girl every single second. Forget cooking (even with Campbell's) for I'd be busy breathing in the precious. Not realistic, I know. You're incredibly blessed, Pat. But you know that. :-D
ReplyDeleteI haven't had tuna casserole in a very long time...and I think I will give your recipe a try one of these days!
