Brooklyn Style Cheesecake with a Nut Crust


 

My husband and I were busy each day this week putting a bit of the Christmas decorations. away, and today we finished undecorating the tree. We try to leave the tree up and lit for the Epiphany on January 6th every year, and this year was no exception.  It was always a very special celebration for my Mother and I always think of her extra dearly that day.  Since we were so busy I am keeping this post short by sharing a delicious cheesecake recipe I made for Christmas Eve.  It is King Arthur Flour's recipe for Brooklyn Style Cheesecake! With a title like that, how could I resist trying this cheesecake?

 I lived in Brooklyn, New York, most of my life and often enjoyed a slice of the famous Junior's Cheesecake slice when I shopped downtown.  The only change I made in the recipe was instead of the very unique and delightful-looking vanilla cake crust that the King Arthur Flour cheesecake called for I made a gluten-free pecan nut crust as we had a guest that had to eat gluten-free.  



As you can see the cheesecake was very light, creamy, and delicious.

The gluten-free, No Bake Pecan Nut Crust was so good and easy to make that I am going to make it every time I make a cheesecake from now on! 

No Bake Pecan Nut Crust

Ingredients:

2 cups pecans
1/2 cup Unsalted Butter
6 tbsp Sugar
1/2 tsp Salt

Directions:

Chop pecans in a food processor or blender until fairly finely chopped.  Remove to a bowl.
Melt butter and mix with the chopped nuts 
Add sugar and salt to the mixture.
Pat into the bottom of a pie pan or springform pan to form a crust and shape some of the nut mixtures along the sides of the pan as desired.

Pour in the pie ingredients or cheesecake mixture and bake as the recipe instructs.


Our weather has remained wintery and the snow we had last week is lingering longer than usual but it is so pretty!




This morning I saw this unusual sight! It is a beautiful rainbow or "Circumhorizontal Arc" cloud.  Ice crystals in a high-altitude cloud act as a prism and create bright colors when the sun shines through them.  It did not last long but gave me a lot of joy!

I'm planning on doing more cooking and baking in Costa Rica this year. Today I'm making a chocolate, earl grey olive oil cake. Untested. I already made a big pot of Mexican chicken soup.

  15. That cheesecake looks amazing!! We've had several Junior's cheesecakes delivered to us since my husband works with a company out of that same area and they send him cheesecakes every now and then as a "thank you." They are SO good!
