Blueberry Peach Cobbler




Are you still enjoying all the bounty of summer's fresh fruits and vegetables?  I combined two of my summer favorites, peaches, and blueberries, to make this fabulous cobbler.  I love the convenience of making food in a cast iron skillet, both stovetop or in the oven, as I think everything looks cozy and homey cooked this way. The skillet also serves as the serving piece, so it's perfect for an informal gathering or family meal. Just make sure you wrap a tea towel or an oven mitt around the handle and use a hot plate underneath when serving, as the cast iron retains heat for a long time. I have an entire Pinterest folder devoted to a collection of cast iron skillet recipes that you can see on this link. This is where I found the idea for this cobbler recipe.  It is a Martha Stewart recipe for a Blueberry Apricot Cobbler, but I modified the recipe to substitute peaches for the apricots.


Blueberry Peach Cobbler
Adapted from a Martha Stewart recipe

Ingredients:
  • 1 tablespoon cornstarch
  • 1/2 cup plus 2 tablespoons granulated sugar, divided
  • Four to five large ripe peaches, cut into 1/2-inch wedges
  • 1 1/4 cups blueberries
  • 1 1/2 cups all-purpose flour (spooned and leveled)
  • 2 teaspoons baking powder
  • 1/4 teaspoon coarse salt
  • 1 stick cold unsalted butter, cut into small pieces
  • 3/4 cup cold heavy cream, plus more for brushing
  • Sanding sugar (optional)

                                      
Directions:

  1. Preheat oven to 375 degrees, with racks in middle and lower thirds. In a large bowl, whisk together cornstarch and 1/2 cup granulated sugar. Stir in peaches and blueberries. Spread mixture into a 10-inch cast-iron skillet.
  2. In a food processor, pulse remaining 2 tablespoons granulated sugar, flour, baking powder, and salt until combined. Add butter and pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. Add heavy cream and pulse 2 or 3 times until combined.
  3. Spoon batter in 8 mounds on fruit mixture. Press lightly on tops to flatten, brush with heavy cream, and sprinkle with sanding sugar if desired.
  4. Bake on the middle rack, with a foil-lined rimmed baking sheet on lower rack to catch drips, until biscuits are golden and juices bubble in the center, 40 to 45 minutes. Transfer to a wire rack and let cool. Serve warm or at room temperature


The blueberry peach combination was sweet juicy and delicious, and the cream biscuit topping was flaky, tender and so flavor full! This was a quick and easy dessert to make and a wonderful way to enjoy these summer fruits and berries.  It can be stored two days at room temperature, and if you don't have a cast iron skillet you can prepare this in a two-quart baking dish instead.



Are you like me and use your iPad to follow an online recipe as you cook?  A gadget I have been enjoying lately is this Belkin Chef Stand and Stylus made for the iPad 2.  The soft rubber lined holder holds the iPad securely either horizontally or vertically, and the rubber tipped stylus is perfect to use to scroll the screen when my fingers are messy from food preparation.  The magnetic tip on the wand works with any touchscreen, and can also be used to wake up an iPad 2. I love it!  This stand was a birthday gift, and I am not in any way being compensated by this company, but I thought I'd pass along the wonderful function ability of this stand for iPad users.  I love having a virtual cookbook at my fingertips, and it makes viewing and following all your wonderful blog recipes on my tiny kitchen counter easier this way!


On a sad note, the news from Aurora, Colorado this morning was unbelievably tragic and horrific. My thought and prayers are with the victims and their families.

    That blueberry peach cobbler looks delicious. That would be a nice combination. I used the bulk of my blueberries and dumped them in my Smirntopf! (Rumtopf)

  2. Yes, my iPad has totally replaced any cookbooks I had in my cupboard. I just love using it...for example...I'm going into my newly decorated kitchen and making your recipe right from your blog sometime today....and I'll be thinking of you the entire time. ! I think that is so amazing....!

  5. Certainly the news from Colorado has gripped us all. It's beyond tragic.

    The cobbler makes me grin, the presentation makes me grin, the red checkered tea towel makes me grin. I do understand the warning so well as I recently burned myself on the skillet...cat underfoot...long story. I'm fully recovered now, but will be making some of those quilted holders for the skillet handle. It should help out.

  6. I've followed with interest your cast-iron skillet pins as I've wanted to get a skillet myself. My mom had several when I was a kid. That cobbler looks dee-lish-us!!

    Yes, the news from Aurora was a horrible thing to wake up to. My iPhone, which I have on the nightstand, had on the screen an update that just said "14 dead in shooting at Colorado theater." My oldest had gone to the Batman show last night, so it scared the out of me. I clicked and was so horrified but relieved it was in Aurora, not Colorado Springs. Then I remembered my youngest in Denver had today off and might have gone with friends so I had to text her immediately to check on her, as she lives just outside of Aurora and that may be her theater of choice. She hadn't gone. What a horrible tragedy. So many young folks there and such sadness for the families.

  8. The news from Aurora, CO this morning is so heartbreaking. I've been watching the coverage on CNN this afternoon with a sense of shock and sadness.

    Your Blueberry Peach Cobbler looks so delicious and I agree with you that it looks especially nice in the cast iron skillet. I've been thinking of buying one for awhile now. Between your recipe and Pinterest board, I think I will be getting one for sure now. :)

  9. Oh Pat! I was about to email you to see if your family in Colorado are ok! I'm still totally gobsmacked by what's happened. I mean people should be able to go to the cinema without such tragic consequences. It is too sad. :-(

  13. Wow, this post was chock full! From fruit cobbler to cool i-pad stands, and all the sad places in between.

    I just ordered the chefs stand! I have really been needing that. I am straight to my ipad for whatever I want to make, even if I might have a recipe in one of my books. Thanks for the tip. One for you is La Tartine Gourmande. Beautiful cook book.

  16. I need to check out that iPad stand. I found a non magnetic cover so I don't have to worry about dirty fingers making a mess. I love my recipes on the iPad instead of printing them out and collecting them in a box or a folder. Your cobbler looks yummy.
    I can't even imagine what the people in the Denver area are going through. It's been a rough bit here for that state. I'm thankful for the peace God gave me as we are moving our daughter out there next week. She will be quite a ways from Aurora but really "ugly" can happen anywhere. I pray peace and healing for all involved.

  18. First to comment about Aurora and the horror of it all. How do these people think? there is definitely something askew in that guy's brain. What a tragedy for those families. To think you're going to the movies and then never come out alive. just a sad, sad day.
    Your cast-iron skillet concoction looks fabulous Pat, and I just checked out your Pinterest page on cast-iron creations. Wow, you have been busy. I'm going back to spend more time (I'll need hours) just with your pins. By the way, I have a peach upside down cake in a cast-iron skillet on my blog, if you're so inclined to add it to the group.
    I also have one of those i-pad holders but I completely forget to use it. I have to go drag it out after reading how you love it so.

  36. The terrible event in Aurora, CO has been very unnerving, so horribly sad... Soon metal detectors & security will be needed for folks to just go to the movies.   42. Thanks for the heads up on the iPad gadget / stand to use in the kitchen. Why can't I think of something like that?, is what I always say. I still do love, love, love, my paper and binder cookbooks along with my iPad2. I agree, blueberries and peaches are great partners and your version of this recipe looks delightful!   46. The cobbler looks delicious! We just went to Steve Martin and the Steep Canyon Rangers and he had a fancy IPad stand that he turned easily from side to side. He explained it had his playlist on it and besides it gave him a chance to check his email once in awhile. the concert was fabulous!

  50. Just catching up after being away. I do love saving recipes on my iPad, such as from blogs ... and I happen to have a sturdy cover that is like a notebook and has a stand so the recipe is visible and easy to read. I just love using the iPad for recipes --- it saves copying them or clipping them out of a magazine. Presto, they are there and being lighted up on the screen makes them even easier to read! Yea for technology! By the way your cobbler looks delicious!
