Mexican Chicken Lime Soup


If there is one thing I absolutely adore, it is bowl of flavorful soup!  This Mexican Chicken Lime Soup was just that, and full of intoxicating flavors that tickled my tongue. It is a Rachel Ray recipe, but I never may have found it if it weren't for Pinterest.

Pinterest lets you organize and share all the beautiful things you find on the web, by "pinning" them onto your own page of web boards that you can name in any categories that you desire.  I have many such boards, and many are food related.  I also have boards for wedding plan ideas for my daughter's spring wedding,  DIY projects that look interesting and a board for crafts I might actually make. I even have a board for things I see that make me smile. After you download a special "pin it" button in your internet explorer's favorites, you can use that link to pin a photo from almost any web site, and it will have the link to the website where you found it.  Any time you wish to return to that web site you click on the photo on your board.  You can also see other Pinterest boards and get ideas from them and repin their pins on your board. I found the Mexican Chicken Lime Soup while scanning the "Everything" Pinterest stream and pinned it to my "Soup" board. As a person who always loved to rip out recipes that I wanted to try from countless magazine over the years, Pinterest now allows me to virtually do the same for web recipes.   One warning: Pinterest can be very addicting! Now the recipe for Rachel Rays delicious Mexican Chicken Lime Soup with the modifications that I added written in red:

Ingredients:

2 tablespoons extra-virgin olive oil

1 onion, finely chopped

6 cloves garlic, thinly sliced

6 skinless, boneless chicken thighs, cut into 1/2-inch pieces - I used chicken breasts

2 canned chipotle chiles in adobo sauce, finely chopped, plus 2 tablespoons adobo sauce

6 cups chicken broth

I added I package of frozen corn

1/2 cup chopped fresh cilantro

Juice of 2 limes

Salt and pepper

1 hass avocado, thinly sliced lengthwise into 12 pieces

Crushed tortilla chips

Sour cream

Directions:

1.In a large saucepan, heat the olive oil over medium-high heat. Stir in the onion and garlic, lower the heat to medium and cook until the onion begins to brown, about 7 minutes. Increase the heat to high, push the vegetables to the side of the pan, add the chicken and cook, stirring, until golden, about 5 minutes. Stir in the chipotles and adobo sauce, then stir in the chicken broth. Lower the heat and simmer for 15 minutes, skimming any foam. Stir in the cilantro and lime juice; season with salt and pepper.

2.Place 2 avocado slices in each of 6 soup bowls and pour in the soup. Top with the tortilla chips. I also added a dollop of sour cream to each serving.




Quick, easy, flavorful!  My kind of soup!

Hmmmm, that does look delicious. I'd have to grind everything up except for the corn and chicken. Don't mind me and my texture issues. I'm so glad that we are allowed a cup of soup daily. This could well be our next one.

Pinterest intrigues me except that I am not able to join not having a Facebook account or a Twitter account. Oh well. I tried.

I put in an invite on Pinterest and when I join I'll be sure to ask for your friendship. Looks like a fun place. That soup looks delicious and Rachel Ray's recipes are usually very reliable. I think I like the few changes you made too.

Pat, my daughter invited me to join Pinterest, but I'm still mulling it over. I'm just afraid I won't get the hang of the thing.

I'd love to have a place to gather all my favorite photos and ideas though...

Maybe I'll give it a try. I have to stop being chicken. :)

Pat, your Pinterest board is huge! You must have been collecting for quite a while. I haven't joined yet, but I try to scroll through fairly often. I found a yummy recipe for savory breakfast muffins on there.

I just finished a bowl of yummy 15 bean soup that I made last weekend. I seasoned it with cumin and garlic and added chicken breasts, chicken sausage and wild rice.

This is just in time for the cool weather that is to arrive tomorrow! I can't wait. This looks delicious and serving it in the red bowl just enhances the ambience of it all! I will look at your pinterest. That's a good idea to pin recipes there. I have so far only done pictures that make me smile! You are right, it can be addicting! Have a great weekend!

OH I am enjoying Pinterest as well. It is my last stop of the day. .when the only energy I have left is to browse. I think the thing I love most about it is just the sheer beauty of the photography.

Well it seems like soup weather has descended on us very quickly and this soup looks really great. Pinterest sounds like something I could use since I'm always seeing recipes I want to try, and then forget where they are. "down here" this is referred to as Tortilla Soup. LOL! It is one of my all time favorite soups. I will have to give Rachel Ray's version a try. Her recipes always have a nice fresh edge to them.

Your soup looks delicious! I made clam chowder in the crockpot yesterday and was thinking this morning that i should just keep the crockpot out on the counter for harvest. Pinterest sounds great- I'm off to see what it's all about. Thanks for the tip.

That soup sounds delish. I looked at Pinterest - it looks interesting but I am trying not to join more sites as I spend so much time on the Internet just to keep up to date with my friends’ blogs and my own – plus I am not a techy. For example I used to be able to click on your pictures twice and they would fill my whole screen – now when I click I get a black background and they enlarge just a little, if I click again I get a slide show. I don’t know what I did to get this instead of your large pictures. Another thing – my blog has not changed since my daughter set it up for me in 2009 - I’d like to get it larger like your blog, but when I go into Blogger I have no idea what to do. So you see I am not techy at all.

Yum...I make mine just a little different...i put cumin in mine, and i roast corn on the grill and cut it off and throw it in.but everything else is pretty much the same...usually i serve it over arroz amarillo with fried plaintains on the side, with a dollop of fresh sour cream on top!

Noting this for when autumn returns (it's 75-80 degrees - and continuing like that all week - that would be a yay!). But I am a sucker for some Mexican soup with lime.... Will check out Pinterest.
