An Easter Reflection

I hope everyone had a very Happy Easter! We had the most joyful day. Although I missed my extended family in New York, and the Easter vigil service at my church that I had attended since childhood, I was surrounded this holiday by my children and grandchildren, and all I could think was "It doesn't get any better than this!"

I managed to get a photo of our appetizers, but when dinner arrived I was so busy preparing everything that my camera stayed dormant. In between, we had an Easter egg hunt, a lego firetruck built by my oldest grandson, lots of chocolate eggs eaten by the littlest grandboy, sleeping and cooing by my baby granddaughter, and lots of love and laughter shared around our table by my family.

Last year was an unbelievable year of change ... a year of sad and happy events...of finding a new home in a few whirlwind days ... selling and packing up a house we lived in for 36 years in New York ... driving 1800 miles across the country ... settling into a new way of life in Colorado and welcoming a new grandbaby.  As an Easter reflection, I realized this was truly a rebirth for my husband and myself, and I feel incredibly blessed that we were able to do all of this!

Change was needed, change was good. We now reap the rewards of being in a new and beautiful place and close to our family again. I feel like I am in heaven and could not be happier.

Thank you, Lord, for all the blessings you have bestowed upon us, and keep us in your graces. Amen

Happy Easter!

It was a fun day as my grandsons stayed at my house today so their Mommy and Daddy could do more unpacking at their new house.  We colored Easter eggs while their Aunt and baby cousin watched.

When little brother was napping, big brother and I made candy Easter eggs. It was an easy Taste of Home recipe to make, and it was a perfect activity for a four-year-old. I shaped the eggs and he rolled them in bowls of decorative sugars and sprinkles and chocolate jimmies.

I think he did a good job!  He will surprise his parents with them at Easter, along with cards he made for them.

Here's the recipe, in case you'd like to make them with your little one today or for a future holiday!

Easter Egg Candies
Ingredients:
one package ( 10 to 12 ounces) vanilla chips or white chips
one package (3 oz) cream cheese cubed
one teaspoon water
1/2 teaspoon vanilla extract
colored sprinkles, colored sugar, and/or jimmies
Directions:
In a microwave safe bowl melt the chips at 50% power in the microwave.
Add cream cheese, water, and vanilla. Stir until well blended.
Chill one hour, or until easy to handle.
Quickly shape into 1-inch size eggs.
Roll in sprinkles, colored sugar, and/or jimmies
Store in airtight container in the refrigerator.

Later that evening, after the boys went home, my husband and I went for a walk along one of the trails in our community and I saw an angel cloud formation in the sky!  It looked so peaceful floating away, and was a wonderful sight to see at the end of a perfect day!

Christ has Risen ~ He has truly Risen!

Wishing you and your family a very Blessed and Happy Easter!
