Pumpkin Bread


One of my favorite treats to make all year long, but particularly in autumn, is pumpkin bread. A few people have asked me for the recipe lately, so I thought I'd share it here today so that it can also be easily accessible to my family and friends. This pumpkin bread is sweet and cake-like in flavor and texture, yet, because it contains pumpkin, it is high in fiber and a good source of vitamin A and vitamin B, potassium, protein, and iron. It's a healthy, guilt-free treat! 


  Pumpkin Bread


Ingredients:

1 & 2/3 cups flour 1/4 teaspoon baking powder 1 teaspoon baking soda 3/4 teaspoon salt 1 teaspoon cinnamon 3/4 teaspoon nutmeg 1/3 cup shortening or softened butter 1 & 1/3 cup sugar 1 teaspoon vanilla 2 eggs 1 cup mashed cooked pumpkin or one 15 or 16 ounces canned pumpkin 1/3 cup water chopped walnuts or pecans, optional 

  Procedure:

Sift together flour and next five ingredients in one bowl. Cream together shortening, sugar and vanilla in a mixing bowl Add eggs, one at a time, and mix until fluffy Stir in the pumpkin to wet mixture Alternately add the flour mixture and the water to the wet mixture until just blended. Add chopped nuts if desired Pour into a well-greased loaf pan ( 9 x5 x2 3/4 inches) Bake at 350 degrees for one hour or until a cake tester inserted into the center comes out clean. Cool on rack. I used a mini loave pan, as you can see in the photos, and you can also use a cupcake pan -- just adjust the time to be much less approximately 20 minutes. Again, a cake tester inserted into the center should come out clean.

 

They are moist and delicious! Perfect as a breakfast treat or mid-afternoon snack. I dusted the mini loaves with a little powdered sugar, and if you make them as a cupcake you can frost them with a sweet cream cheese frosting for a wonderful flavor combination.

When I had my hair cut today the woman ahead of me said she watches The Today Show just to get glimpses of NYC because her daughter lives there now. I said, "Do I have a site for you!"

Wow, Pat! Doesn't that look delicious! You never fail to cook up some outstanding food over here. I love to visit and see what's in your oven, and this does not disappoint. Honestly, you all might just make a decent cook out of me yet with things like pumpkin bread. YUM!

Hi Pat, thank you so much for your visits and birthday wishes. yes it is wonderful to have my sisters nearby. I have one sister that still lives in Atlanta. Not too far away.

Your pumpkin bread is very like my recipe. A delicious treat. I heard that pumpkin will be hard to buy in the stores this year. On Tuesday I was looking for some and couldn't find one can.

I read your previous post and your history lesson is wonderful as always. the bull mosaic or collage is awesome. A lot of power there! I honestly am surprised at how many historical acts in the forming of our country's freedom started in NY. And I thought I knew our history. Not. that old iron fence is amazing considering it's age.

Today I posted an acorn squash recipe for tomorrow. W e had it for dinner and loved it. I have company again or should I say still. Mu cousin left on Sun and my sister-in-law and her hubby arrived yesterday. Each staying for 10 days. Lots of cooking going on here. Very little time for my computer. sigh.

Wonderful recipe! My sister and her husband always come to my house on Halloween night. I was trying to plan my menu just last night and will definitely add your recipe to it. Thank you for sharing it.

I know that NY has exquisite Christmas decorations and all the associated festivities, but does it also have special Halloween features? I've always been curious about how NY celebrates Halloween.

I really like pumpkin bread too and make it every year. My recipe came from the grandmother of a friend. I like mine because it makes 3 loaves at once! I also make mini loaves and give them away to friends and neighbors around the holidays.

I'm (pathetically?!) planning on making pumpkin biscuits for my DOG tomorrow! I found a recipe on another blog and have wanted to give it a whirl...it's supposed to be good for their digestion. I suppose that means it's good for us, too, so pass the pumpkin bread! :-)

Although against my better judgment, I also picked up a pre-made (THE HORROR! :-) spelt flour crust on sale at my local organic store tonight, so I'm thinking of making a pie tomorrow, too. I'm curious how this pre-made crust stacks up.

I love pumpkin bread!
I did catering part time when my dh first got sick, and I must have made 100's! But they are wonderful to have on hand, stay so nice and moist, and so good with a "schmear" of cream cheese! I don't know if I spelled that right, a NY word..:)
